Sugar Free Banana Bread
We’re a big fan of sugar free banana bread in my house. It’s a great snack option for kids and adults alike.
Most traditional banana bread recipes are laden with sugar and we know that excess sugar is inflammatory to our bodies and can increase our risk of insulin resistance and type 2 diabetes.
This sugar free banana bread is a great alternative as it’s super tasty and also provides us with a good dose of macro and micro nutrients.
It’s provides a protein hit from the eggs, plus eggs are a great source of choline which helps with memory and concentration.
The banana provides the sweetness but also gives you fibre and contains serotonin which is a neurotransmitter great for improving mood.
The almond meal bulks out the bread and offers healthy fats as well as being a source of magnesium and more fibre.
Mix that together with the cinnamon and vanilla and your tastebuds are in heaven.
Sugar free banana bread recipe
3 large eggs
1 ½ cups over ripe banana, mashed (approx. 3 bananas)
2 cups almond meal
1 tablespoon coconut oil, melted
2 teaspoons baking powder (or alt. ¼ tspn baking soda)
1 teaspoon vanilla powder or essence
½ teaspoon ground cinnamon
Preheat oven to 180C.
In a mixing bowl whisk eggs, add mashed banana and continue to whisk until combined.
Add in almond meal, baking powder, cinnamon, coconut oil and vanilla, mix until combined well.
Pour batter into a lined loaf tin.
Bake in oven for 40-45 minutes or until cooked through.
Tips – if you like your banana bread nutty, add in ½ cup chopped walnuts or hazelnuts.
For an added antioxidant boost stir through ½ cup of blueberries before pouring into the loaf tin. Or alternatively, add in 1/4 cup raw cacao powder and mix through well.
